  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced tomatoes (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and place them on a baking sheet lined with parchment paper. Bake for 40–50 minutes until tender.
  2. In a large skillet over medium heat, heat olive oil. Add the chopped onion and cook for about 3–4 minutes until softened. Stir in minced garlic and chopped bell pepper; cook for another 2–3 minutes.
  3. Add ground turkey to the skillet, breaking it apart with a spatula. Cook for about 6–8 minutes until browned.
  4. Stir in cumin, chili powder, paprika, salt, and pepper. Then mix in corn kernels and diced tomatoes (if using); cook for an additional 2–3 minutes until heated through.
  5. Once sweet potatoes are done baking, remove from the oven and slice open lengthwise. Fluff the insides with a fork.
  6. Spoon the turkey mixture evenly into each sweet potato and garnish with fresh cilantro if desired.
