  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon pineapple juice
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup fresh pineapple, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 2 green onions, sliced, for garnish

Instructions

  1. In a mixing bowl, combine soy sauce, honey, brown sugar, rice vinegar, pineapple juice, red pepper flakes (if using), salt, and pepper; stir until smooth.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes on each side until pink. Remove from the skillet.
  3. In the same skillet, sauté garlic and ginger for about 30 seconds until fragrant.
  4. Pour in the prepared sauce and simmer for 1-2 minutes to thicken slightly.
  5. Return shrimp to the skillet; toss to coat in the sauce and simmer for an additional minute.
  6. Stir in chopped pineapple and cook for another minute until softened.
  7. Drizzle with sesame oil, add lime juice and cilantro before serving.
