  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 2 large carrots (diced)
  • 2 celery stalks (diced)
  • 1½ cups dried green or brown lentils (rinsed)
  • 3 medium potatoes (diced)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 8 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and black pepper (to taste)
  • 2 cups fresh spinach or kale (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, and celery; sauté until softened (5–7 minutes).
  2. Stir in rinsed lentils, diced potatoes, diced tomatoes (with juices), vegetable broth, cumin, smoked paprika, thyme, rosemary, salt, and pepper. Mix well.
  3. Bring to a boil; then reduce heat to low. Cover and simmer for 40 minutes or until lentils are tender.
  4. If using spinach or kale, add during the last 5 minutes of cooking until wilted.
  5. Adjust seasoning if needed before serving hot.
