Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for filling texture)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla extract, mixing well.
  3. In another bowl, whisk together all-purpose flour, baking soda, and salt, then gradually combine with wet ingredients until a dough forms.
  4. Roll dough into 1-inch balls, shape them into ovals, and press with a fork to create a crosshatch pattern. Sprinkle tops with sugar.
  5. Bake for 8–10 minutes until lightly golden and cool on a wire rack.
  6. For filling: Beat creamy peanut butter and softened butter until smooth; gradually add powdered sugar and adjust texture with milk as needed.
  7. Assemble by spreading filling between two cookies.
