  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 cup uncooked long grain rice
  • 2 cups chicken broth
  • Mixed bell peppers and peas

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, salt, and pepper until just combined. Form into 20-24 meatballs.
  3. Sear meatballs in a skillet over medium heat until browned.
  4. In a saucepan, combine honey, soy sauce, ketchup, water, and garlic; simmer to blend flavors.
  5. In the greased baking dish, layer uncooked rice and veggies. Pour broth over it and nestle the meatballs on top. Drizzle with the honey garlic sauce.
  6. Cover with foil and bake for 40 minutes; uncover and bake an additional 10-15 minutes until cooked through.
