  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves, minced
  • 2 ripe avocados
  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • Salt and pepper (to taste)
  • Oil (for cooking)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a small bowl, whisk together honey, lime juice, lime zest, and garlic for the glaze.
  3. Heat oil in a frying pan over medium-high heat; cook chicken for 6-7 minutes per side until golden.
  4. Brush glaze onto chicken in the last 2 minutes of cooking; let rest before slicing.
  5. Mix cooked rice with coriander and lime juice; season with salt.
  6. Toss avocado slices with lime juice and seasonings.
  7. Assemble layers using a ring mold: start with rice, then avocado slices, and top with chicken.
