  • 2 shallots
  • 5 cups arugula
  • 1/4 cup parsley, freshly chopped

  • 1/4 cup toasted pepitas (hulled pumpkin seeds)
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper + more for topping

Instructions

  1. Rinse quinoa under cold water. Cook in a medium saucepan with stock until absorbed (15-20 minutes). Set aside to cool.
  2. Slice shallots and sauté in olive oil over medium heat until golden and crispy (15-20 minutes). Drain on paper towels.
  3. In a bowl, whisk together olive oil, apple cider vinegar, honey, dijon mustard, salt, and pepper.
  4. In a large bowl, combine cooled quinoa, arugula, parsley, apple slices, pepitas, and fried shallots. Drizzle with vinaigrette and toss gently.
