  • ¾ cup toasted pecans (optional)
  • 16 oz cream cheese (softened)
  • ½ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup sour cream
  • ½ cup unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar (sifted)
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F for the cheesecake layer and 350°F for the carrot cake layers.
  2. Prepare the cheesecake mixture by beating softened cream cheese with sugar, cornstarch, egg, vanilla extract, and sour cream until smooth; bake for 30-35 minutes. Cool completely.
  3. For the carrot cake layers, whisk together dry ingredients in one bowl and wet ingredients in another; combine gently before folding in carrots and pineapple.
  4. Divide batter into prepared pans; bake for 28-32 minutes until a toothpick comes out clean. Cool completely on wire racks.
  5. Make frosting by mixing softened butter and cream cheese until fluffy; gradually add powdered sugar, followed by honey and vanilla extract.
  6. Assemble by layering carrot cake, cheesecake filling, and remaining carrot cake; frost top and sides before chilling for at least one hour.
