  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 large egg (room temperature)
  • 1 & 1/4 cups old fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add in the egg and vanilla; mix until well combined.
  3. Gradually incorporate flour, oats, cinnamon, nutmeg, baking soda, and salt into the wet mixture until just combined.
  4. Use a cookie scoop to portion out dough onto the prepared baking sheet and slightly flatten each ball. Bake for about 10 minutes or until edges are lightly golden.
  5. Allow cookies to cool on the baking sheet for 20 minutes before transferring them to a cooling rack.
