  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced
  • 1/2 cup turkey bacon bits

Instructions

  1. Prepare all ingredients by chopping and measuring them.
  2. Set the Instant Pot to Sauté mode and heat olive oil for one minute.
  3. Sauté chopped onion for 2-3 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  4. Stir in Cajun seasoning, paprika, and cayenne pepper.
  5. Add diced potatoes and coat them in the seasoning mixture.
  6. Pour in chicken broth and stir well.
  7. Close the lid, ensuring the valve is set to Sealing. Cook on high pressure for 10 minutes.
  8. Allow natural pressure release for 5 minutes before switching to Venting.
  9. Open the lid, stir in heavy cream and shredded cheddar until melted.
  10. Adjust seasoning if necessary. Serve garnished with sliced green onions and turkey bacon bits.
