  • 1/4 cup mayonnaise
  • 2 tbsp Jamaican jerk seasoning

Instructions

  1. Boil the cubed Yukon Gold potatoes in salted water until fork-tender (about 12–15 minutes). Avoid overcooking.
  2. In a mixing bowl, combine mayonnaise and Jamaican jerk seasoning; allow flavors to meld.
  3. Drain the boiled potatoes and let them cool for about 15 minutes.
  4. Gently fold the cooled potatoes, red onion, and parsley into the mayo mixture until well coated.
  5. Season with salt and pepper as desired. Cover and refrigerate for at least one hour before serving.
