  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips (or semi-sweet)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In your stand mixer, cream together the cubed butter and sugars until light and fluffy. Add the egg and egg yolk; mix until combined.
  4. Gradually incorporate the dry ingredients into the wet mixture on low speed. Fold in the chocolate chips.
  5. Shape six cookie portions (about 5.7 oz each) tall rather than flat, and place on parchment-lined cookie sheets.
