  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tbsp olive oil (for cooking)
  • 1 cup orzo pasta
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper. Mix gently.
  2. Form the mixture into 1-inch meatballs.
  3. Heat olive oil in a skillet over medium heat; add meatballs and cook for 7-9 minutes until browned on all sides. Remove from skillet.
  4. In the same skillet, sauté minced garlic for 1 minute. Add orzo and toast for 2-3 minutes.
  5. Pour in chicken broth and simmer for 8-10 minutes until orzo is tender.
  6. Stir in heavy cream and Parmesan cheese; season to taste.
  7. Add cooked meatballs back to the skillet and mix gently; simmer for an additional 3-4 minutes.
