  2. Preheat oven to 350°F (175°C). Roll dough to 1/8-inch thickness and cut into circles; place on a baking sheet lined with parchment paper.
  3. Bake for 8-10 minutes until lightly golden; cool completely.
  4. In a saucepan, whisk together lemon juice, granulated sugar, egg yolk, cornstarch, and zest; cook until thickened and cool.
  5. Beat egg whites with cream of tartar until foamy; gradually add sugar and beat until stiff peaks form.
