Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. Combine it with water in a saucepan and bring to a boil over medium heat.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork and let cool.
  3. In a large mixing bowl, combine the cooked quinoa, chickpeas, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper until blended.
  5. Pour the dressing over the salad mixture and toss gently to coat evenly.
  6. Serve chilled or at room temperature.
