  • 1 Tbsp + 1 tsp poppy seeds – optional
  • 1 tsp fine salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 2 Tbsp fresh lemon zest
  • 1/2 cup granulated sugar (for filling)
  • 1/2 cup packed light brown sugar
  • 2 Tbsp fresh lemon zest (for filling)
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar (for icing)
  • 1/4 cup fresh lemon juice
  • 2 Tbsp unsalted butter, melted (for icing)
  • Fresh Lemon Zest (for icing)

Instructions

  1. Combine warm buttermilk and yeast; let sit until frothy.
  2. Mix in eggs, sugar, butter, and salt until well combined.
  3. Gradually add flour until a dough forms; knead until smooth.
  4. Let the dough rise in a greased bowl until doubled in size.
  5. Roll out the dough and spread it with softened butter; sprinkle with sugar and zest mixture.
  6. Roll tightly into a log, slice using dental floss, and place in a greased pan to rise again.
  7. Bake at 350°F (175°C) for about 28 minutes or until golden brown.
  8. Drizzle with lemon icing made from powdered sugar, lemon juice, and melted butter.
