  • 2 tbsp olive oil
  • 45 portions of pasta (spaghetti, linguine, or bucatini)
  • 2 tbsp salted butter
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup canned pumpkin purée
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup grated Mozzarella
  • Chopped fresh parsley or micro greens

Instructions

  1. Cook the pasta in boiling salted water until al dente; drain and reserve some pasta water.
  2. Season chicken with salt and pepper; cook in olive oil in a skillet until golden brown. Let rest before slicing.
  3. In the same skillet, melt butter and sauté garlic. Add chicken broth, pumpkin purée, heavy cream, and herbs; simmer until combined.
  4. Toss sliced chicken and drained pasta in the sauce; adjust with reserved pasta water as needed.
