  • 1 Egg yolk
  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M's

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  2. In one bowl, whisk together sugar, eggs, melted butter, oil, and vanilla until smooth. Stir in flour, cocoa powder, cornstarch, and salt; fold in chocolate chips.
  3. In another bowl, mix flour, cornstarch, baking soda, baking powder, and salt. Cream together butter and sugars until fluffy; add peanut butter and vanilla. Mix in the egg then stir in oats and chocolate mix-ins.
  4. Spread brownie batter in the prepared pan and dollop the cookie mixture on top. Gently swirl them together.
  5. Bake for about 40 minutes or until a toothpick inserted comes out with moist crumbs.
  6. Allow to cool before cutting into bars.
