  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp instant yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup warm water (110°F)
  • 2 tbsp butter, melted
  • 8 mozzarella cheese sticks
  • ¼ cup grated parmesan cheese
  • 2 tbsp fresh rosemary, finely chopped
  • 8 cups water (for baking soda bath)
  • ⅓ cup baking soda

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast; let sit for about 5 minutes until foamy.
  2. Stir in melted butter, salt, and flour; mix until dough forms. Knead for about 5 minutes until smooth.
  3. Place dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled.
  4. Punch down dough; divide into 8 portions and roll each into a strip. Place a mozzarella stick in the center and seal tightly.
  5. Shape each strip into a pretzel shape and dip in boiling baking soda water for 15-20 seconds.
  6. Transfer to parchment-lined baking sheet; brush with egg wash and sprinkle with parmesan, rosemary, garlic powder, and pepper.
  7. Bake at 425°F for 12-15 minutes until golden brown.
