  • 1/2 cup butter (room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 whole egg + 2 egg whites (separated)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mini vegan marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 cup light brown sugar (packed)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan.
  2. In a bowl, cream together the butter, granulated sugar, whole egg, two yolks, and vanilla until smooth.
  3. Gradually mix in the flour, baking powder, and salt until just combined. Spread into the prepared pan.
  4. Sprinkle chocolate chips and mini vegan marshmallows on top of the base layer.
  5. In a separate bowl, whip the egg whites until stiff peaks form, then gently fold in the brown sugar until combined.
  6. Spread the meringue mixture evenly over the top of the bars.
  7. Bake for 30-35 minutes or until golden brown on top. Let cool completely before cutting into squares.
