  • 1 cup butter
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt the butter and brown sugar until combined. Stir in vanilla extract.
  3. Add rolled oats and cook over low heat for about 3 to 4 minutes until well blended.
  4. Press half of the oat mixture into the bottom of the prepared dish.
  5. Melt peanut butter and chocolate chips in a microwave-safe bowl, stirring until smooth.
  6. Spread the chocolate mixture over the oat base, reserving some for drizzling later.
  7. Top with remaining oat mixture, pressing firmly into place and drizzling with reserved chocolate.
  8. Refrigerate for at least 2 to 3 hours before cutting into bars.
