  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley
  • Crushed red pepper flakes
  • Shredded cheddar or mozzarella cheese

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Add chicken pieces and season with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown (6–8 minutes). Remove the chicken and set aside.
  3. Deglaze the pan by adding chicken broth and scraping up brown bits.
  4. Stir in honey BBQ sauce and simmer for 2–3 minutes.
  5. Add uncooked penne with enough water to cover (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until pasta is tender.
  6. Return chicken to the skillet; combine everything and let simmer for another 2–3 minutes.
  7. Adjust seasoning if needed, garnish with parsley or cheese, and serve hot.
