  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 large yellow onions
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 garlic cloves, minced
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Add thinly sliced onions with salt and sugar; cook for 20-25 minutes until caramelized.
  2. Push onions to one side; add chicken chunks to the skillet. Season with salt, pepper, thyme, and oregano; sear for 2-3 minutes on each side until browned.
  3. Stir in minced garlic; then sprinkle uncooked rice over the mixture. Pour in beef broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-22 minutes until rice is cooked through.
  5. If using cheese, sprinkle it on top after cooking; cover for 5 minutes to melt. Garnish with fresh parsley before serving.
