  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 cups fresh cheese tortellini
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp fresh basil or parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Season the chicken with salt and pepper. In a large pot, melt butter over medium-high heat and cook the chicken until browned (about 6–8 minutes). Remove from pot and set aside.
  2. In the same pot, melt more butter and sauté minced garlic until fragrant (about 30 seconds). Stir in crushed red pepper flakes.
  3. Pour in chicken broth while scraping up any bits from the bottom. Stir in heavy cream and bring to a simmer.
  4. Add tortellini to the pot and cook until tender (about 4–6 minutes).
  5. Return the cooked chicken to the pot, stir in Parmesan cheese until melted, and cook for another 2–3 minutes before serving.
