  • Ground beef or lamb
  • Onions
  • Garlic
  • Tomato paste
  • Cinnamon
  • Butter
  • Flour
  • Milk
  • Cheese (Kefalotyri or Parmesan)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice eggplants into 1/4-inch rounds, salt them, and let sit for 30 minutes to draw out bitterness.
  3. In a large skillet, sauté chopped onions and minced garlic in olive oil until softened. Add ground meat and cook until browned. Incorporate tomato paste and cinnamon; simmer for about 10 minutes.
  4. For the béchamel sauce, melt butter in a saucepan over low heat. Whisk in flour until combined, then gradually add milk until thickened. Season with salt and nutmeg.
