  • 1 whole chicken (35 lbs, giblets removed)
  • 1 medium onion (peeled and halved)
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Allow the chicken to rest at room temperature for 30-60 minutes.
  2. Preheat the oven to 425ºF (218ºC) and line a roasting pan with parchment paper if desired.
  3. Place the chicken breast side up in the roasting pan and pat dry with paper towels.
  4. Stuff the cavity with onion halves for added flavor.
  5. In a bowl, mix avocado oil with salt, paprika, onion powder, thyme, garlic powder, and pepper to create a seasoning paste.
  6. Brush the paste over every exposed surface of the chicken.
  7. Roast in the preheated oven for 70-90 minutes until an internal temperature of 165ºF (74ºC) is reached; baste occasionally but avoid basting during the last 20 minutes.
