Ingredients

Scale
  • 1 1/2 lb fresh wide flat rice noodles
  • 8 oz steak (thinly sliced)
  • 2 tablespoon Thai soy sauce
  • 1/2 teaspoon brown sugar
  • 2 teaspoon vegetable oil
  • 2 tablespoon oyster sauce
  • 2 tablespoon Thai soy sauce
  • 2 tablespoon Thai black soy sauce
  • 1 tablespoon fish sauce
  • 1 1/2 tablespoon brown sugar
  • 1 tablespoon water
  • 5 cloves garlic (minced)
  • 2 large eggs (whisked)
  • 4 stalks Chinese broccoli (sliced)

Instructions

  1. Marinate the beef by mixing sliced steak with Thai soy sauce, brown sugar, and vegetable oil. Let it rest for at least 15 minutes.
  2. Prepare the fresh noodles by gently separating them; soak in warm water if needed.
  3. Mix together oyster sauce, Thai soy sauce, black soy sauce, fish sauce, brown sugar, and water in a bowl until combined.
  4. Heat a tablespoon of vegetable oil in a wok over medium-high heat. Cook the marinated beef for 1-2 minutes per side until done; set aside.
  5. In the same wok, heat another tablespoon of oil and sauté minced garlic for 30 seconds before adding sliced Chinese broccoli; cook until wilted.
  6. Push ingredients aside and scramble the whisked eggs on the empty side; combine everything once cooked.
  7. Add prepared noodles to the wok and char for about 30 seconds before drizzling in the sauce; toss until well-coated. Return beef and vegetables to combine thoroughly.
