  • 2 sheets puff pastry
  • 8 ounces goat cheese
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. To make the blackberry jam, combine blackberries, water, lemon juice, and sugar in a saucepan over medium heat. Cook for 20-30 minutes until thickened. Allow to cool.
  2. Thaw the puff pastry sheets for about 20-25 minutes and roll each into a rectangle about ¼ inch thick on a floured surface.
  3. Spread half of the cooled blackberry jam on one sheet of puff pastry and crumble half of the goat cheese over it. Cut into strips and twist each strip gently before baking.
  4. Preheat your oven to 400°F (200°C). Place the twists on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with lemon zest mixed with raw sugar and thyme.
  5. Bake for 16-18 minutes until golden brown.
