  • 1 ½ tbsp Avocado Oil
  • 2 ½ lb Beef Tenderloins
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¼ cup Yellow Onion (thinly sliced)
  • 1 tsp Fresh Rosemary (minced)
  • ⅓ cup Brown Sugar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • 3 Large Peaches (pitted, peeled, and diced)

Instructions

  1. Preheat your oven to 375°F.
  2. Heat avocado oil in a large cast iron skillet over high heat. Season the beef tenderloin with salt and pepper.
  3. Sear the beef for about 3-4 minutes on each side until browned, then remove from the skillet and set aside.
  4. In the same skillet, sauté sliced onion and minced rosemary for about one minute until golden.
  5. Add brown sugar, apple cider vinegar, Dijon mustard, and diced peaches to the skillet. Stir to combine.
  6. Return the beef to the pan with the peach glaze and bake for about 10 minutes or until an internal temperature of 145°F is reached.
  7. Let rest for 5-10 minutes before slicing and serving with warm peach glaze.
