  • 1 brown onion (finely chopped)
  • 2 garlic cloves (minced)
  • 3 carrots (peeled and diced)
  • 3 waxy potatoes (diced)
  • ½ cup frozen green peas
  • 4 cups chicken broth
  • 4 tbsp full-fat sour cream (room temperature)
  • 4 tbsp fresh dill (divided)

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. In a large pot, heat butter over medium-low heat. Add garlic and onion; cook until fragrant.
  3. Stir in carrots and scallions; season with salt, pepper, marjoram, turmeric, nutmeg, and bay leaf. Cook briefly.
  4. Add diced potatoes and peas to the pot along with chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  5. Stir in sour cream until fully incorporated and add three tablespoons of dill. Cook uncovered for another five minutes.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with remaining dill.
