  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. In a small saucepan, cook the pumpkin puree over medium heat for about 10 minutes until reduced. Let cool.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar. Mix in cooled pumpkin puree and vanilla extract.
  4. In another bowl, whisk together flour, cornstarch, baking soda, salt, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet ingredients until just combined. Fold in chocolate chips.
  6. Scoop dough into balls and place on the prepared baking sheet. Freeze for at least 30 minutes.
  7. Preheat oven to 350°F (175°C). Bake frozen cookie dough balls for about 10 to 12 minutes.
  8. Let cool on the baking sheet before transferring to a cooling rack.
