  • 3/4 cup granulated sugar

  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
  3. In another bowl, combine pumpkin puree, milk, melted butter (or oil), and vanilla. Mix until smooth.
  4. Pour wet ingredients into the dry mixture and stir until just combined.
  5. Transfer the batter to an 8-inch casserole dish. In a separate bowl, combine granulated sugar, brown sugar, and chopped pecans; sprinkle this over the batter.
  6. Carefully pour hot water over the top without stirring.
  7. Bake for about 40 minutes or until the center is set. Allow cooling for 5–10 minutes before serving.
