  • 4 bagels (plain, whole wheat, or everything)
  • 2 large eggs
  • 6 tablespoons heavy cream
  • 1/4 cup shredded cheddar cheese
  • 4 slices cooked turkey bacon (chopped)
  • 1/4 cup sautéed spinach or bell peppers
  • Salt and pepper (to taste)
  • Optional: chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off each bagel or press down in the center to create a cavity.
  3. In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper until combined. Stir in turkey bacon, sautéed vegetables, and cheese.
  4. Spoon the filling into each bagel cavity generously.
  5. Place on a lined baking sheet and bake for 15–18 minutes until filling is set and golden.
