2.5 to 3-pound spaghetti squash
1 pound large raw shrimp, peeled and deveined
4 cloves garlic, minced
5 ounces fresh baby spinach
1/2 cup low-sodium vegetable stock
Juice of 1/2 lemon
Salt and pepper to taste
3 tablespoons salted butter (use in parts)
Instructions
Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, scoop out seeds, brush with butter, season with salt and pepper, and place cut-side down on a baking sheet. Roast for 30-35 minutes until tender.
In a skillet over medium heat, melt butter and sauté minced garlic and red pepper flakes until fragrant. Add shrimp and cook until pink, then stir in spinach until wilted. Pour in vegetable stock and lemon juice; simmer for 2-3 minutes.
Scrape cooked spaghetti squash strands into bowls, top with shrimp scampi sauce, garnish with parsley and lemon wedges.
