  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound pasta (spaghetti or your choice)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and dry the cherry tomatoes, placing them in a large bowl. Slice off the top of the garlic head.
  3. Drizzle tomatoes with 2 tablespoons olive oil, season with salt, pepper, and red pepper flakes (if using). Toss to coat.
  4. Spread tomatoes on a parchment-lined baking sheet along with the garlic cut side up, drizzle with olive oil and sprinkle with salt.
  5. Roast for 25–30 minutes until tomatoes are blistered and garlic is soft.
  6. Meanwhile, boil salted water in a large pot and cook the pasta until al dente according to package instructions.
  7. Reserve 1 cup of pasta water before draining the pasta.
  8. Squeeze roasted garlic into a large bowl; add roasted tomatoes and juices. Mash together gently.
  9. Stir in remaining olive oil, salt, pepper, cooked pasta, and reserved pasta water until desired consistency is reached.
  10. Fold in fresh basil before serving topped with Parmesan cheese.
