  • 4 boneless beef loin chops (150g each)
  • 35g plain flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 120ml chicken stock
  • 90g unsalted butter
  • 2 teaspoons fresh rosemary, finely diced
  • 2 cloves fresh garlic, finely diced
  • 1 lemon, cut into wedges

Instructions

  1. Season and coat the beef chops in a mixture of flour, salt, garlic powder, and black pepper.
  2. Heat olive oil in a large frying pan over medium-high heat. Sear the beef chops for about 3 minutes on each side until golden brown.
  3. Remove the chops from the pan and reduce heat to medium. Add rosemary and garlic to the remaining fat; sauté until fragrant.
  4. Pour in chicken stock and whisk in the butter until melted and smooth; simmer for 2–3 minutes.
  5. Return the beef chops to the pan, basting them in the sauce for an additional minute before serving with lemon wedges.
