  • 8 ounces dried pasta
  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup grated Parmesan cheese
  • 12 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • Kosher salt and black pepper

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.
  2. Place salmon filets on the baking sheet, brush with olive oil and lemon juice, then season with salt and pepper.
  3. Roast the salmon in the cold oven for 20 minutes until it flakes easily and reaches an internal temperature of 145°F.
  4. While the salmon cooks, bring salted water to a boil in a large pot and cook pasta until al dente according to package instructions. Reserve some pasta water before draining.
  5. In the same pot, combine drained pasta with pesto and grated Parmesan cheese. Stir well, adding reserved pasta water as needed for desired consistency.
  6. Flake cooked salmon into bite-sized pieces and mix into the pasta or serve atop each portion.
