  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tbsp unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 tsp sea salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs, granulated sugar, and melted butter; press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  3. Combine sliced apples with brown sugar, cinnamon, and flour; spread evenly over cooled crust.
  4. Beat cream cheese and granulated sugar until smooth, add eggs one at a time, then mix in vanilla and sour cream.
  5. Pour cheesecake mixture over the apples and bake for 60–70 minutes until nearly set.
  6. Cool completely at room temperature before refrigerating for at least 4 hours.
  7. For the salted caramel sauce, melt sugar until amber; stir in butter and heavy cream, then add sea salt.
  8. Drizzle caramel over chilled cheesecake before serving.
