  • 2 cups all-purpose flour, sifted
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 cup granulated sugar
  • ⅔ cup light brown sugar
  • 1 tsp salt
  • 3 large eggs, ideally room temp
  • ⅔ cup vegetable oil
  • ⅓ cup buttermilk (mix ⅓ cup whole milk + 1 teaspoon vinegar to make your own)
  • 1 cup sour cream, ideally room temp
  • ¾ cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • ¾ cup boiling water
  • 1 cup granulated sugar for frosting
  • 5 tbsp unsalted butter for frosting
  • ½ cup heavy cream, warmed up
  • ¾ tsp salt for frosting
  • 1½ tsp vanilla
  • 200g dark chocolate
  • 8 oz cream cheese, room temp
  • ⅓ cup cocoa powder for cream cheese frosting
  • 1 cup powdered sugar
  • ½ cup salted caramel sauce
  • 1 cup heavy cream, cold

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round baking pans.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, granulated sugar, brown sugar, and salt.
  3. Add in eggs, vegetable oil, buttermilk mixture, sour cream, cocoa powder, instant coffee, and boiling water. Mix well using an electric mixer until smooth.
  4. Pour equal amounts of batter into the prepared pans and place both pans in the oven.
  5. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool in their pans for 10 minutes before transferring them to a cooling rack.
  6. In a saucepan over medium heat, melt granulated sugar until it turns golden brown. Remove from heat; carefully add butter and whisk until melted.
  7. Slowly pour in warm cream while stirring continuously until smooth. Mix in salt and vanilla extract. Stir in dark chocolate until fully melted and glossy; set aside to cool slightly.
  8. In another bowl, beat together cream cheese until smooth using an electric mixer. Gradually add cocoa powder and powdered sugar; mix well.
  9. Pour in cold heavy cream and whip until fluffy.
  10. Once everything has cooled, place one cake layer on your serving plate. Spread a layer of chocolate caramel fudge frosting on top followed by some salted caramel sauce. Add the second layer and repeat frosting steps on top and sides of the cake.
