  • 1/2 cup light brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips (for sprinkling)
  • 1 1/2 cups sweetened shredded coconut
  • about 10 ounces sweetened condensed milk
  • 4 to 5 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat the oven to 350°F and spray a 9-inch pie dish with cooking spray.
  2. Melt the butter in a microwave-safe bowl for about one minute; let cool slightly.
  3. Whisk in the egg, brown sugar, and vanilla until smooth.
  4. Stir in the flour and salt until just combined.
  5. Pour into the prepared pie dish and smooth the top. Bake for 10–12 minutes until edges are firm.
  6. Remove from oven; sprinkle with chocolate chips, then coconut, followed by drizzling condensed milk and caramel sauce.
  7. Return to oven and bake for an additional 25 minutes until bubbly and set.
  8. Cool on a wire rack; drizzle melted chocolate over the top once cooled.
