  • 1 pound smoked chicken or turkey sausage, sliced
  • 1 ½ pounds baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 bell pepper, sliced
  • 1 cup fresh spinach (optional)
  • Fresh parsley for garnish

Instructions

  1. Parboil baby potatoes in salted water for about 8–10 minutes until fork-tender. Drain and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sausage slices and cook until browned (4–5 minutes). Remove from skillet.
  3. In the same skillet, add remaining olive oil. Sauté onion and garlic for about 2 minutes until fragrant.
  4. Add sliced bell pepper; cook for an additional 3–4 minutes until softened.
  5. Stir in parboiled potatoes with smoked paprika, Italian seasoning, salt, and black pepper. Cook for about 5–7 minutes until golden brown.
  6. Return sausage to the skillet and toss everything gently. If using spinach, fold it in during the last two minutes of cooking.
  7. Garnish with freshly chopped parsley before serving.
