  • 2 acorn squash
  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs (thyme, sage, rosemary)
  • Salt and pepper to taste
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F and line a cookie sheet with parchment paper.
  2. Slice each acorn squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut side down on the cookie sheet and bake for about 20 minutes until tender.
  4. In a skillet, cook the ground turkey sausage over medium heat until browned. Remove from heat.
  5. Sauté onions in olive oil until softened, then add kale, garlic, celery, chopped apples, and herbs; cook until combined.
  6. Mix in the cooked sausage and some flesh scooped from the squash.
  7. Stuff each squash half generously with the filling and return to the oven for an additional 15 minutes.
  8. Top with feta cheese and nuts; bake for another 5 minutes until cheese melts.
