  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 1/4 cup dry white apple vinegar (optional)
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 1 teaspoon Dijon mustard (optional)
  • 2 large eggs, divided
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté diced onion until soft, then add garlic and mushrooms, cooking until browned.
  3. Season with thyme, salt, pepper, and apple vinegar (if using). Stir in cream cheese, Parmesan, and Gruyère until combined.
  4. Roll out the puff pastry and create diagonal strips along the edges. Fill the center with the mushroom mixture and braid the pastry.
  5. Brush with beaten egg and bake for 20–22 minutes until golden brown.
  6. Let cool slightly before slicing; garnish with fresh parsley.
