  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Rinse shrimp under cold water; pat dry and season with salt and pepper.
  2. Prepare vegetables: wash asparagus, slice red bell pepper, rinse snap peas, mince garlic and ginger.
  3. In a small bowl, mix soy sauce, cornstarch, and water until combined.
  4. Heat vegetable oil in a large skillet over medium-high heat; add garlic and ginger for about 30 seconds.
  5. Add shrimp in a single layer; cook for 2-3 minutes per side until pink and opaque. Remove from pan.
  6. Stir-fry asparagus and red bell pepper for 2-3 minutes; then add snap peas for another 2 minutes.
  7. Return shrimp to the pan; pour sauce over all ingredients and stir well to coat.
  8. Cook for an additional 1-2 minutes until sauce thickens slightly.
