Ingredients

Scale
  • 1 sheet frozen puff pastry
  • 16 ounces cream cheese (at room temperature)
  • 3/4 cup granulated sugar
  • 3 large eggs (at room temperature)
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 3 tablespoons all-purpose flour
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a 9-inch springform pan by greasing it and lining the bottom with parchment paper.
  2. Roll out the puff pastry to about 1/4 inch thick, pressing it into the prepared pan and chilling while you prepare the filling.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in heavy cream, vanilla extract, and salt until combined. Gently sift in flour and mix until just combined.
  4. Pour the batter into the crust, sprinkle blueberries on top, fold over any excess pastry edges if necessary, and sprinkle with sugar.
  5. Bake for 55–65 minutes until golden brown on top but still slightly jiggly in the center. Let cool before serving.
