  • 2 Chicken Breasts (skinless and boneless)
  • 12 oz Penne Pasta
  • 1 cup Heavy Cream
  • 1/2 cup Freshly Grated Parmesan Cheese
  • 2 tbsp Chipotle Peppers in Adobo Sauce
  • 2 Small Red and Yellow Bell Peppers (thinly sliced)
  • 1 cup Asparagus (cut into 1-inch pieces)
  • 1/4 cup Organic Frozen Peas
  • 1 Small Sweet Onion (finely diced)
  • 3 Fresh Garlic Cloves (minced)
  • 2 tbsp Avocado Oil
  • 1 tbsp Grass-fed Butter
  • Salt and Freshly Cracked Pepper (to taste)
  • 1/4 cup Shaved Parmigiano
  • 1/4 cup Chopped Fresh Parsley or Cilantro (for garnish)

Instructions

  1. 1. Boil water in a large pot and cook the penne pasta according to package instructions; drain and set aside.
  2. 2. In a skillet over medium heat, add avocado oil. Season chicken breasts with salt, pepper, and honey; cook until fully done, then slice.
  3. 3. In the same skillet, sauté onion and garlic until fragrant. Add sliced bell peppers, asparagus, and peas; cook until tender.
  4. 4. Lower heat and stir in heavy cream, Parmesan cheese, chipotle peppers, paprika, cayenne (if using), salt, and pepper; let simmer for 3-5 minutes.
  5. 5. Toss cooked pasta with the sauce and top with sliced chicken before serving.
