  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup breadcrumbs (or panko for extra crunch)
  • 1 egg
  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 tablespoon lime juice
  • Salt to taste
  • 4 burger buns, toasted
  • 4 slices of pepper jack cheese (optional, for extra heat)
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onions
  • Pickled jalapeños (optional, for extra spice)

Instructions

  1. In a mixing bowl, combine the ground chicken with chopped chipotle peppers, adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and egg. Mix until well combined.
  2. Divide the mixture into four equal portions. Shape each portion into a patty about ¾ inch thick.
  3. Preheat the grill to medium-high heat and lightly oil the grates. Cook the patties for about 5 minutes per side until they reach an internal temperature of 165°F (75°C).
  4. In a small bowl, mix together mayonnaise, chopped chipotle pepper, lime juice, garlic powder, and salt to taste.
  5. Place each cooked patty on a toasted bun. Top with pepper jack cheese if desired. Add lettuce leaves, sliced tomatoes, sliced red onions, and pickled jalapeños if you want an extra kick.
