  • 2 tablespoons butter
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups whole milk or heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 45 jalapeños, chopped (seeds removed)
  • 1/2 cup cooked, diced chicken or preferred protein
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 tablespoons butter (for dippers)
  • 1 1/2 cups shredded cheddar cheese (for dippers)

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion and minced garlic; cook until onions are soft.
  2. Pour in the chicken broth and milk (or cream), stir well, and bring to a simmer for 5-7 minutes.
  3. Gradually mix in the shredded cheddar and Monterey Jack cheeses until melted.
  4. Stir in chopped jalapeños and cooked chicken (or protein). Season to taste with salt and pepper.
  5. For grilled cheese dippers, butter one side of each bread slice. Place two slices in a skillet butter-side down, top with cheese, then add another slice butter-side up. Cook until golden brown on both sides, then cut into strips.
