  • 2 cups cooked chicken, shredded or diced
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked chicken, chopped artichokes, and thawed spinach. Stir in mayonnaise, sour cream, 3/4 cup mozzarella cheese, 3/4 cup Parmesan cheese, garlic powder, onion powder, black pepper, and salt until well blended.
  3. Lightly grease a 9×13-inch baking dish with olive oil.
  4. Spread the chicken mixture evenly into the prepared dish.
  5. In a small bowl, mix breadcrumbs with melted butter until coated; sprinkle over the casserole along with the remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 20 minutes; then remove foil and bake for an additional 10–15 minutes until golden brown.
