  • 1 large egg
  • 1 tablespoon olive oil
  • ½ teaspoon dried dill
  • 2 cups fresh spinach (chopped and packed)
  • ¾ cup crumbled feta cheese
  • 1 sheet frozen puff pastry (thawed)
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Spray nine cups of a muffin pan with cooking spray.
  2. In a microwave-safe bowl, soften the cream cheese in short bursts until smooth. Mix in the egg, olive oil, and dill until well combined.
  3. In another bowl, combine chopped spinach, feta cheese, and plant-based bits if using. Pour the cream cheese mixture over the spinach blend; season with salt and pepper. Mix thoroughly.
  4. Cut the thawed puff pastry into nine squares and line each muffin cup with a square. Fill each cup with the spinach mixture and gather the pastry corners over the filling, pinching to seal. Brush with melted butter.
  5. Bake for about 20 minutes or until golden brown. Let cool slightly before removing from the pan.
